Most comforting food - Homestyle Egg Curry

Sometimes, all you need is a comforting yet spicy dish, and today I decided to make my simple egg curry. This recipe is a regular in my kitchen – easy to prepare with just a few ingredients, but packed with flavor!

Ingredients:
4 boiled eggs
1/2 tsp turmeric powder
1/2 tsp red chilli powder
2 tbsp mustard oil (or any cooking oil)
1 bay leaf, 2 cloves, 1 small cinnamon stick, 1 green cardamom
2 medium onions (finely chopped)
1 tbsp ginger-garlic paste
2 tomatoes finely chopped
1/2 tsp red chili powder
1/2 tsp chicken masala
1 tsp kasoori methi
Salt to taste
Water as needed
Fresh coriander for garnish (optional)
Method:
1. Egg Fry:
Coat the boiled eggs with a little turmeric and salt, then lightly fry them until they turn golden brown. Set them aside.
2. Make the Masala Base:
Heat oil and add the bay leaf, cloves, green cardamom and cinnamon stick. Let it sizzle for a few seconds, then add the chopped onions and sauté until golden brown.
3. Add the Paste:
Stir in the ginger-garlic paste and cook for 2-3 minutes until the raw smell disappears. If using tomatoes, add them now and cook until soft.
4. Add Spices:
Stir in the turmeric powder, red chili powder, chicken masala, and salt. Mix well and cook for a minute. Add kasoori methi.
5. Make the Gravy:
Add some water to create a gravy. Once it starts to boil, add the fried eggs into the gravy.
6. Simmer:
Cover and simmer for 5-7 minutes on medium heat to let the eggs soak in the flavors. Garnish with coriander leaves.
7. Serve:
Serve hot with rice, roti, or paratha.
Tips:
Frying the eggs enhances their taste and texture in the curry.
Whole spices add an aromatic flavor to the dish.
You can add boiled potato for more flavour.
