Rustic Peanut Potato Curry (Aloo Moongphali Masala) – A One-Pot Wonder

Ingredients:


4 medium potatoes, peeled and cubed


2 to 3 tbsp peanut chutney (roasted peanuts smooth or slightly coarse)


1 tbsp ginger-garlic paste


½ tsp turmeric (haldi)


½ to 1 tsp red chilli powder (adjust to taste)


Salt, to taste


1 big sliced onion


1–2 green chillies, slit


1 tbsp mustard oil


A splash of water



How to Make Rustic Peanut Potato Curry:


1. Prep the mix: In a heavy-bottomed pan, combine the cubed potatoes with peanut chutney, ginger-garlic paste, turmeric, red chilli powder, salt, sliced onions, and green chilli slits.



2. Add mustard oil: Drizzle in about a tablespoon of mustard oil. Add a splash of water — just enough to prevent sticking.



3. Mix & cook: Give everything a good mix right in the pan. Cover with a lid.



4. Let it slow cook: Turn on the flame to low-medium and let the curry simmer covered for about 20 minutes. Stir once or twice to avoid sticking.



5. Serve hot: Once the potatoes are tender and coated in a thick, nutty masala, turn off the flame. Serve warm with roti or enjoy it on its own.



Tip:


This dish works great for toddlers too — just skip the green chilli for a milder version. I often mash a bit of it and serve it with soft rice for my little one!
